You can actually create a last minute casserole dish idea on what you have around the house. Here is a versatile recipe that you can create with what you have on hand.

Ingredients:

  • 1 pound of ground beef (sub with ground turkey or ground pork)
  • 1 small onion (sub with dried onions or onion powder)
  • 1 garlic clove (sub with jar garlic or garlic powder)
  • 1 small can of tomato sauce (sub with a 1 cup of leftover pizza or spaghetti sauce)
  • 1 can of green beans (sub with leftover mixed veggies or frozen veggies of your choosing)
  • 2 cups of mashed potatoes (make them fresh, make them instant or use leftover mash potatoes)
  • 1 cup of cheese (use any variety of shreds, even slices if that is all you have)

Directions:

  1. Brown the ground meat with the onions and garlic in a frying pan.
  2. Add some Italian seasoning, salt and pepper to taste.
  3. Drain the fat and add your tomato sauce choice to the meat.
  4. Spread the meat mixture across the bottom of a small casserole dish.
  5. Add your veggie choice (drain any liquids).
  6. Salt and pepper your veggies to desired taste before adding them on top of the meat mixture.
  7. Spread on your mashed potato choice and add cheese to the top.
  8. Bake at 400 degrees until golden brown and bubbly. Allow your casserole to cool for 15 minutes and serve.

Tips for every casserole

  • Make sure each level of your casserole is seasoned. Adding some simple salt and pepper will bring out all the flavors in your casserole.
  • Make it your own! If you decided you wanted to use different seasonings that you like, do so. Just be careful not too over salt or over season.
  • Use what you have! Casseroles were first made on what people had on hand to eat. If you don’t have that one ingredient, find a substitute for it.
  • Casseroles are not complicated and never should be! Calm down and create, you never know it could be what the family starts to beg for each week for supper.
