Sometimes preparing fast-fix meals for dinner is as easy as breaking open a few eggs.  Although scrambled eggs are typically thought of as a main ingredient for breakfast, they are also an excellent choice for those busy evenings when dinner prep time must be kept to a minimum.  Eggs provide a solid nutritional base for any meal.  They are an excellent source of protein, packing 6 grams of protein per egg and they also include important B vitamins such as B6, riboflavin, folate, thiamine and B12.

The real versatility of this breakfast mainstay comes to light with the almost unlimited amount of ingredients that pair so well with a plate of light and fluffy scrambled eggs.  Vegetables such as onions, mushrooms, sweet peppers, zucchini and tomatoes are all excellent choices that add sound nutritional value and fiber to this adaptable egg dish.  Pre-cooked bacon crumbles can add wonderful flavor to scrambled eggs along with a wide variety of cheeses such as feta, mozzarella, provolone and Colby.

For those that truly like to think outside of the box, add some not-so-typical ingredients such as

  • water chestnuts,
  • a favorite salsa,
  • canned black beans or
  • seasoned tofu.

To top off a plate of scrambled eggs, add a dollop of sour cream, a bit of chopped green onion, a pinch of garlic or a tablespoon of hummus.  To round out the meal, add some fresh fruit such as pear or apple slices or berries with a little coconut milk.
