It’s lunchtime and what do you have? Salad—again. But you don’t really want a salad for lunch; you’d rather have a slice or two of pizza. But, hang on, salads don’t have to be just a bunch of mixed greens sitting on your plate day after day! There are a whole host of food items out there that will raise your salads to a completely new level and these are just four terrific ideas.

Steak and Potato Salad

Do you enjoy a great steak and potato dinner every once in a while and then wonder what to do with the little bit of leftovers? Well, don’t throw them out—throw them in a salad instead! Cut up your leftover grilled steak and oven-roasted red potatoes into bite-sized pieces. Mix them with a bit of fat-free sour cream and black pepper and let the mixture chill in an air-tight container for a few hours or overnight in the refrigerator. When you’re ready to eat, place the mixture on top of some romaine lettuce for an amazing salad filled with flavor and protein.

Grilled Fish Salad

If you like fish, try tossing it into a salad. Various kinds of fish can be grilled and incorporated into your salad to make a delicious tasting dish in addition to some fish being loaded with omega-3 fatty acids which are great for your health. You can use tuna, trout or some other fish with great flavor, but the more popular fish for grilling is salmon. Line your bowl or salad plate with mixed salad greens, place a bit of black bean salsa on top of the lettuce, add the pieces of grilled fish and plop a little fat-free sour cream on top to make a tasty lunch or dinner.

Chicken and Fruit Salad Recipe

Ingredients:

  • 1 c of salad greens
  • ½ c of chopped, grilled chicken
  • ¼ c each of strawberries, sliced, and red grapes, fresh and cut in half
  • ½ of a peeled tangelo, pulled into sections
  • Raspberry vinaigrette
  • ? c of fat-free Monterey Jack cheese

Place the salad greens into your salad bowl. Toss the grilled chicken onto the lettuce and then scatter the fruit on top. Round out this colorful dish with the cheese and a small amount of Raspberry vinaigrette.

Pizza Salad

Do you love pizza? Of course you do! Who doesn’t? But, sadly, pizza contains a lot of calories and fat. However, there is a way you can still get the flavor of your favorite pizza without all that nasty fat. Grab a salad bowl and fill it with some mixed salad greens. Some of your favorite pizza toppings can go on top of the greens like sliced pepperoni, sliced onions, a little bit of shredded reduced fat Italian cheese or reduced fat Mozzarella cheese, diced tomatoes and, if you like, maybe even some sliced peppers and mushrooms. A teaspoon of fat-free or low-fat Italian dressing can be drizzled on the top.
