Where health food and decadence meet, this strawberry Greek yogurt is born. Juicy strawberries combined with farm-fresh milk create a thick, rich yogurt that's packed with nutrients and fresh, fruity flavor. It's creamy, it's dreamy...it's like heaven on a spoon.

To make your own, all you need are simple ingredients: milk, fresh strawberries, and a bit of store-bought yogurt. The yogurt provides the live active cultures that the milk will use to transform itself into yogurt. Read the label to be sure that the yogurt you purchase contains both of the live active cultures you need: lactobacillus bulgaricus and streptococcus thermophilus. You can also purchase starter culture specifically for this purpose, but the yogurt works just as well.

Fresh Strawberry Greek Yogurt

Ingredients: 

  • 1 C ripe strawberries, chopped
  • 1 quart milk
  • 5 T plain yogurt (or 1 T starter culture)
  • 2-3 T honey (optional)

Instructions: 

  1. Pour the milk into a medium-sized saucepan and heat to 180 degrees Fahrenheit.  At this stage, the milk will have just begun to boil. Take care not to over-boil. Remove the pan from the heat immediately and cool to 100 degrees Fahrenheit, or lukewarm.
  2. When the milk has cooled sufficiently, stir in the yogurt or starter culture until smooth. Then, stir in the chopped strawberries.
  3. Now your yogurt is ready to incubate.

If you have a yogurt maker, pour your yogurt mixture into the provided container(s) and follow the manufacturer's instructions. To achieve a thick Greek yogurt, set the timer for at least 10 hours or up to 13.

Alternatively, you can incubate your yogurt in the oven. While the milk/yogurt mixture is cooling, place a medium-sized Dutch oven in your oven and preheat to 110 degrees Fahrenheit. When the yogurt mixture has cooled to 110 degrees, pour it carefully into the Dutch oven and cover tightly with the lid. Close the oven door and do not disturb for at least 10 hours.
