Homemade Brioche is a delicious treat that goes well with jellies or preserves. It makes a great breakfast or snack to have with coffee or tea.

This brioche recipe is fairly simple to follow. However, pay attention to how long it would take to prepare this recipe and what ingredients you need. This recipe may take over 24 hours to prepare due to the dough! Be sure to plan in advance. Please, don't be discouraged by the number of steps they are very short and easy to follow. Give this recipe a shot and you won't be disappointed.

Ingredients:

  • 1 tablespoon of dry active yeast
  • 1/3 cup of water warmed to 110 degrees F
  • 3 1/2 cups of all purpose flour
  • 1 tablespoon of white sugar
  • 1 teaspoon of salt
  • 4 eggs
  • 1 cup of softened butter
  • 1 egg yolk
  • 1 teaspoon of cold water

Keep in mind that this recipe makes enough for two 9x5 inch loaves. If you are planning on having guests this may not be enough broiche for you.

Directions:

  1. Dissolve the yeast in a small bowl of warm water. (Keep in mind that you can substitute this for 1 ounce of fresh yeast if it is easier or more convenient.)
  2. In a large bowl mix together: flour, sugar, and salt.
  3. Then mix the eggs and yeast into this bowl.
  4. Beat until the dough is well mixed.
  5. Turn dough out onto a floured surface and knead it for approximately 8 minutes.
  6. Flatten the dough and spread 1/3 of the butter on it.
  7. Knead the dough well.
  8. Repeat steps 6 and 7 until all of the butter has been used. Be sure to allow the dough to rest in between kneading sessions. Total time should be approximately 20 minutes.
  9. Get a large bowl and lightly oil it.
  10. Place dough in the bowl, turn it over, and lightly oil some more.
  11. Cover bowl with plastic wrap and let it rise in a warm place until it has doubled in size. This should take about an hour.
  12. Deflate the dough, cover it in plastic wrap, and put it in the refrigerator for at least 6 hours, preferably overnight.
  13. Preheat oven to 400 Degrees F.
  14. Lightly grease two 9x5 loaf pans.
  15. In a small bowl beat the egg yolk with the one teaspoon of water to form a glaze.
  16. Turn the dough out onto a lightly floured surface. Divide the dough into two equal halves.
  17. Place each half into one of the loaf pans. Cover in plastic wrap and allow to rise (approximately 1 hour).
  18. Brush the dough with the egg yolk and water mixture.
  19. Bake approximately 25 minutes or until golden brown. Be careful not to over-bake.
  20. After cooling for ten minutes, remove loaves from the pans and continue cooling on a wire rack.
