Sometimes it doesn?t matter what time of the year it is you just have to have a dish of ice cream! But if you?re on a fairly tight budget or don?t care for store-bought ice cream, then why not make your own? It?s cheaper and tastes much better than the brands you find at the store. But ice cream recipes can be so complicated?some recipes require eggs in which you have to be cautious that they don?t end up becoming scrambled eggs; while other recipes use ice water. That?s just way too complex?particularly for ice cream, right? The following recipe is so easy to make and it only has three ingredients. Yes, three! The best part is it doesn?t depend upon the use of an ice cream machine.

Classic Vanilla Ice Cream

Ingredients:

  • 2 c. heavy cream
  • 1 14 oz. can of sweetened condensed milk
  • 1 tsp. vanilla extract

Directions:

In a medium-sized bowl, mix the sweetened condensed milk with the vanilla extract. Pour the heavy cream into a different bowl and whip until it becomes creamy and thick. Fold the cream carefully into the milk mixture; scoop or pour this concoction into a 2-quart freeze-safe container, cover and place in the freezer for at least 8 hours. You can also use vanilla pod and add vanilla beans to your ice cream for more flavorful results.

Add-Ins

If you?d like to spruce up the plain vanilla ice cream, there?s no end to what you can add in! You can put in semi-sweet chocolate chips using chopped Nestle Tollhouse morsels or mini morsels, Reese?s Peanut Butter Cups cut into small pieces, banana bits (or other fresh fruit), nuts, brownie bites, Oreos?and so many more. You can throw in as much or as little as you want into the condensed milk and then continue the directions from there.

Other Ice Cream Flavors

To make a different flavor of ice cream, just substitute vanilla extract for another flavored extract. For example, if you?d like to make coffee ice cream, drop in 1 teaspoon of coffee extract into the condensed milk or, instead, you could throw in 1 tablespoon of instant coffee into the condensed milk and go on with the directions from there. There are many flavors of extract: coconut, banana, ginger, almond, orange, mint, rum, maple, pineapple, eggnog, lemon, spearmint, lime, chocolate, peppermint, cherry, root beer and strawberry. There are, of course, lots more! Don't forget that you can always mix in fresh ingredients like shredded coconut, chocolate chips, cherries or strawberries.

With all of the add-ins and extracts, you could come up with some terrific ice cream flavors! Maybe Nutella with Peanut Butter Chips ice cream sounds delicious to you; or perhaps you?d like one of these: Chocolate Mocha Coffee, Chocolate Caramel S?mores, Crushed Malt Ball, Blueberry-Coconut, Mint Chocolate, Strawberry Cheesecake and Candy Bar.
