The word brunch evokes images of a leisurely meal, lingered over and fully enjoyed. The menu generally consists of a hearty breakfast dish (typically egg-based) along with a variety of lighter fare and perhaps pastries. There are many dishes suitable to serve at brunch, but one that combines ease and versatility is the frittata.

A frittata is an egg dish, something like a cross between an omelet and a quiche. Frittatas use an egg/milk mixture to bind savory ingredients together. The dish is usually started on the stove top and finished in the oven. Leftovers are often used in the filling, and any fresh ingredients such as vegetables need to be cooked before adding to the egg mixture.

This recipe uses common techniques and ingredients for a traditional Italian frittata. This recipe works best using a well-seasoned cast iron skillet.

Classic Italian Frittata

  • 10 large eggs
  • 1/3 cup milk or cream
  • 2 TBSP extra virgin olive oil
  • 1 onion cut in half and sliced thin
  • 2 cloves garlic, crushed
  • 1-2 boiled or baked potatoes, diced
  • 4-5 slices cooked bacon or pancetta, crumbled
  • 2-3 ripe Roma tomatoes, chopped
  • 1/4 cup fresh chopped basil
  • 1 cup shredded mozzarella cheese, divided
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Beat eggs and milk or cream with a wire whisk in a medium bowl. Stir in 1/2 cup of the cheese. Set aside.
  3. In a 10" cast iron or oven safe pan, heat the olive oil over medium heat until it shimmers.
  4. Add onion and garlic to pan and cook until onions are translucent and fragrant.
  5. Add potatoes and cook until they start to brown, about 5 minutes.
  6. Add bacon or pancetta, tomatoes and basil and cook 2-3 minutes or until basil is limp.
  7. Add egg and cheese mixture.
  8. Sprinkle with salt and pepper. Stir to combine ingredients, then let cook undisturbed for 3-5 minutes or until bottom and sides begin to set slightly.
  9. Sprinkle with remaining cheese and transfer entire pan to oven. Bake 12-15 minutes or until eggs are set and top is slightly browned.

Variations on this recipe are endless. Add vegetables like broccoli or asparagus for extra color and texture. Experiment with your favorite herbs and spices (for instance, adding paprika gives the frittata elements of heat, smoke and depth). Softer cheeses will result in a creamier texture, while hard cheese produces a dryer dish. Use sausage instead of bacon, or make it meatless.
