Butternut Squash Soup

Fall is here and butternut squash soup is a favorite soup for the season. We love to make it, and we have all sorts of fun additions to share with you to help you perk up the flavor of this soup.

  • Brown butter sage swirl - Nutty, rich, and herby, sage-infused brown butter makes a great last minute addition to this soup. To make this, put 2 tablespoons of butter and a few fresh sage leaves into a small pan. Heat over medium to melt the butter; then continue to heat. The butter will begin to darken, brown, and become aromatic. Remove from the heat when the butter is golden brown. Add one tablespoon per bowl of soup when serving.
  • Sriracha curry - If you prefer your soup on the spicy side, consider adding curry powder to the soup as it cooks. Experiment by adding one teaspoon at a time until you find an amount that tastes good to you. When serving, spice up the food a little more by adding a few drops of the spicy chili-garlic sauce sriracha to the top.
  • Amaretti cookies, cinnamon, and honey - When you're after a way to heighten the sweetness of this soup, this combination is unbeatable. Sprinkle cinnamon to taste in the soup; add a few tablespoons of honey to really highlight the sweetness of the squash. Crumble the amaretti, a sweet Italian biscuit, by hand or crush in a mortar and pestle. Ladle the soup into bowls, and then add amaretti on top as a crunchy and sweet garnish.

Salt and pepper can always be added to taste. Next time you put a pot on, experiment with one of these additions and contact us to let us know how you liked it! You can also let us know your preferred flavor addition to winter squash soups if we left it out.
