Let's be honest. Cupcakes are good any time of year. Just because you can serve a chocolate cupcake no matter what the calendar says doesn't mean you should, though. So what the heck - let's talk about some spring cupcake ideas.
- Coconut: Nothing says spring quite like coconut. It's pretty, light and fluffy -- a perfect treat for longer, warmer days. If you're feeling in the mood to decorate, add two cups of coconut and a two drops of green food coloring to a sealed jar and shake. Now you have "grass" that you can sprinkled on top of your frosted cupcakes; add gumdrops of jelly beans as eggs and you can make them into Easter or May Day baskets.
- Pineapple: Truth be told, we haven't tried Betty Crocker's Pineapple Upside-Down Cupcakes ourselves (yet), but we can't wait until they do. There's something about pineapple's sweet, tropical flavor that makes it perfect for warmer weather.
- Creme de Menthe: Mint is light and refreshing -- not the right flavor for winter, but excellent for this time of year. Andes Creme de Menthe Cupcakes sound indulgent. If you need a little less going on in your cupcakes, give Grasshopper Cupcakes a spin.
- Strawberry Cream: Right about now is when strawberries -- which had tasted like sawdust all winter -- start to be available in grocery stores at prices normal people can afford.
