When I say best banana muffins, I mean the best banana muffins! This recipe is one of the first I made when I was a young energetic, inexperienced adult. You remember that time when you get your first apartment, first job, first boyfriend and you realize how good your mother fed you all those years. This was an attempt to reproduce mom’s food. I copied this recipe from her cook book and it’s following me for the last 20 years now. I‘ve made it so many times. First for myself, then for a boyfriend who was probably more in love with my banana muffins than he was with me. After, I made it for my little kids who became teenagers. We ate these muffins for breakfast, lunch, snacks... with a little cream on them, it can be a nice dessert.
This recipe is easy and is a basic one. If you want to add anything else to it, it works. You want them more sweet one day, add chocolate chips. You’re looking for something healthy, add some nuts or raisins. I even tried it with dried cranberries. Sometimes, when I had some in my cupboard I‘d switch the vanilla essence for almond essence. You could use this basic recipe and let your imagination do the rest. Even if your experiment is not an extraordinary culinary success.. oh, well! You’re not losing a lot, it’s a cheap one with ingredients that are all already at home. During all those years, I tried other banana muffin recipes and none equal the taste and the texture of this one. Simple you say? Yes. But nice to know and for sure a keeper in your cook book.
I don’t know about you, but I like my bananas not too old. So, when I bake this, I make sure the bananas are still yellow and are not turning brown yet. This is my taste, but I think your chance of success is better this way. I always asked myself why older members of my family were waiting for the bananas to turn brown before they bake banana muffins or bread. If it’s your habit and you like it this way, it’s good too. Like I said, this recipe can adjusted to your preference and wherever your imagination brings you!
- 1?2 cup butter
- 1 cup sugar
- 2 eggs, beaten
- 4 bananas, thoroughly mashed
- 1 1?2 cups flour
- 1 teaspoon baking soda
- 1?2 teaspoon salt
- 1?2 teaspoon vanilla
- Cream together butter and sugar.
- Add eggs and mashed bananas.
- Combine well.
- Sift together flour, soda and salt. Add to creamed mixture, one third at the time
- Add vanilla.
- Pour into greased and floured muffin pan.
- Bake at 350 degrees for 35 minutes.
- Keeps well, refrigerated.
This recipe will give you about 12 good sized muffins, or a large loaf. I did it in a cake form two. Please be careful with the baking time if you’re not doing it as muffins. It can change your cooking time.
If you have picky kids like some of mine are, try to give this to them in the morning. At least, they’re going to leave the house with something good in their stomachs before the day begins. Little trick I used several times.
The paper I originally wrote this recipe on doesn’t even look like a recipe anymore. I’m wondering if someone other than me could read it after the effects of time and baking damage.
