Everyone craves a gourmet, home-cooked dinner, but who has the time? Heading to the store for ingredients you've never heard of, trying to follow a confusing recipe, and getting the family to appreciate it are all challenging. There's no need to be discouraged because an easy, quick meal can be created in your kitchen. This homemade pasta with grilled chicken, artichoke hearts, and green chile Alfredo will amaze the taste buds without breaking your wallet.

There isn't much you will have to get for this recipe. The artichoke hearts and green chile can be substituted with spinach and some mild jalapeno peppers. Really, it's up to you as to what kind of vegetable you want to throw in.

Green Chile Alfredo Sauce

Ingredients

    • 1/2 cup butter

    • 1 package cream cheese

    • 2 cups milk

    • 8 ounces Parmesan cheese

    • 2 cloves garlic minced

    • 1 small can artichoke hearts, drained

    • 1/2 to 1 cup chopped mild green chile (choose your spice and amount for your family's taste)

    • Salt and pepper to taste

    Directions

    1. Melt butter and sauté garlic until aromatic.

    2. Add green chile and hearts, sauté for about two to three minutes.

    3. Pour in milk slowly, over medium heat.

    4. Bring to a boil and reduce heat to medium-low.

    5. Add cream cheese and Parmesan, stirring constantly until melted.

    6. Salt and pepper to taste.

    Grilled Chicken

    Ingredients

      • 3 boneless chicken breasts

      • Water to boil

      • 2 tablespoon olive oil

      • 1 tablespoon oregano

      • 1 clove garlic minced

      • 1 tablespoon cumin

      • 1 teaspoon salt

      • 1 teaspoon pepper

      Directions

      1. Boil the chicken breasts until cooked thoroughly. Set aside and allow to cool enough to handle.

      2. Cube chicken into bite-size pieces, about 1".

      3. Heat the olive oil and sear chicken until slightly browned.

      4. Sprinkle seasonings and continue cooking a couple more minutes.

      5. Toss in sauce and keep warm.

      Fresh Made Pasta

      Now it's time for the fresh made pasta. You may never buy boxed pasta again. Here's an easy recipe to follow for spinach fettuccine.

      Ingredients

        • 1 10-ounce package of thawed frozen spinach

        • 3 cups white, all-purpose flour

        • 1 tsp salt

        • 2 eggs

        Directions

        1. Drain all the extra liquid from the spinach. Using a food processor, combine the spinach, flour and salt. Chop and pulse until they are all well blended.

        2. Using a clear glass or measuring cup, break eggs and whisk with a fork for a minute for two. Slowly pour eggs into the food processor while it's running on low. Keep mixing for a minute at a time until dough sticks together when pinched. Add a teaspoon of water if the dough is too dry and stir, continue adding a teaspoon at a time until it's where you need it. If it's too wet, do the same with some flour.

        3. Place your dough onto a floured counter top or large cutting board. Knead for a few minutes and then wrap it up in some plastic wrap and place in the refrigerator for half an hour to chill.

        4. Roll the dough into a large ball and slightly flatten. Then, cut 12 pieces of equal size and cover each with plastic wrap. Flatten the uncovered dough with the palm of your hand and then place it into the pasta machine roller. Set it on the widest setting to smooth the dough more. Folding the dough in half each time, put it through the machine about six or eight times or until the edges are smooth.

        5. Set the roller on a slightly smaller setting and send the dough through a few times. Next, put the dough onto a kitchen towel or soft towel and allow it to dry for a bit, about five minutes. If the dough seems wet and sticky, sprinkle with a bit of flour to make it easier to work with.

        6. Most pasta machines have a setting for fettuccine, which is usually a quarter inch in size. Run your dough through the machine and cut it the length you want.

        7. Fill a pot with enough water to cover the pasta and bring it to a boil; add pasta and boil the fresh pasta for a few minutes, usually no more than five minutes. Cook until it's soft or al dente, then drain pasta and set aside.

        Everything is ready to toss your spinach pasta with your warm sauce and serve with your favorite garlic bread. Brush a large loaf with butter, sprinkle with garlic powder and Parmesan, and broil for two to three minutes. It's a perfect side for this delicious dinner.
